Smokers, from patio models to trailers
If you’ve ever been to a barbecue competition, you probably have seen some of the elaborate grill trailers the pros use to work their magic with their bbq secrets
Well, you don’t need such a huge production to produce the same results at home. With a small Brinkman smoker for example, you can smoke up some succulent ribs or chicken. The flavor comes down more to your wood selection. The differences between the huge professional models and your little patio model are basically cooking area and fire management. The pro models usually have a seperate firebox that is accessible with out opening the cooking area. This keeps the temperature very constant, a must with long cooking times. But a small smoker is not too bad for home use. Some patio models do very well at holding temperature constant too. One that comes to mind is Green Egg.
Which ever smoker you decide to purchase, with practice you will be turning out fabulous smoked food in no time.
